more yummy stuff

I have been inspired lately to cook healthier things for my family.
This is my attempt at making hummus.
I love hummus.....
I used a little too much paprika.
But I still thought it was yummy.

So today I felt a little more creative and this is what I made.


I don't know what to call it but I used:
Spinach, strawberries, olive oil, fresh lemon juice, fresh minced garlic,
salt and pepper all mixed together.



Then I heated up this Naan bread for 3 min.
Sprinkled some shredded Romano cheese on top.
Then topped it with the spinach mixture.



It was soooooo yummy!
Jim and I did not even share it with the kids.

A little Caprese salad for lunch.
I am trying really hard to eat healthier.
But to be honest with you, sometimes it makes me feel guilty.
It really is more expensive to eat healthier.
I could feed our entire family on hamburger helper for less than $5.
(I know! That is so gross!)
We all know organic fruit is more expensive.
Anyway, I really enjoyed this yummy, healthy lunch.
I also had some Indian Naan bread. Garlic. mmmmmm

Dinner



We decided to make Lasagna today for dinner.
On the back of the ricotta cheese was this yummy recipe.
Fudgy Peanut Butter Pie.
A quick phone call to Jim (who was out on an errand)
and he got the pie crust we needed.
I had a cute little helper in mind.
My other cute helper had helped me with the lasagna.

It is an experience cooking with kids.
But hopefully one they will always remember.

The New Me.

Callie said that she wants me to put more posts on my blog. So here I am. This is my new hairdo. I had it cut and the hairstylist went crazy! My hair has been past my shoulders since I was about 13 years old. I was a little afraid at first but I really am enjoying this sassy new do now.
The super cute earrings and necklace are from my super friend Suzanne. They are all the way from South Africa. The girls got cute bracelets and Conner got a sling shot. Just what every little boy needs. Love it.

Cinco de Mayo!

Who says that South Africans and really white people can't celebrate the coolest Mexican holiday! We just needed a little excuse to break out the margaritas and the carne asada!
Suzanne and Neil nicknamed Jim. He is now affectionately know as Martin Stewart.
He does not have the home decor thing down but his cooking is the bomb!









This is Jim's pico de gallo. It was so yummy. He even roasted the jalapenos on the grill.






This is his fruit pico. Roasted pears and mangos. Need I say more?

Danille's Welcome Home Party.

Emma's friend Danille went to South Africa with her mom Suzanne for an entire month! They were visiting family. While they were gone we borrowed her dad to help us with our move. God's timing is so awesome. If Suzanne and Danille had been home we would have never been able to keep Neil working as much as he did. Our move also brought us about 2 minutes from their house. How cool is that!
Emma missed Danille very much so she planned a welcome home party for her.
